Chocolate Zucchini Cake

 

Chocolate Zucchini Cake

Heat oven to 325 degrees
Butter and flour a bundt pan 

Ingredients:
1 cup butter
2 eggs
1 ¾ cup sugar
1 teas. Vanilla
½ cup sour milk
2 ½ cups flower
4 T. Dutch process cocoa
½ teaspoon baking powder
1 teaspoon baking soda
¼ teaspoon cinnamon – optional
¼ teaspoon ground cloves – optional
½ teaspoon cayenne pepper – not optional…do it!
2 cups shredded zucchini
optional: 1/3 cup chocolate chips

Sift flour, cocoa, baking powder and soda and spices together in a bowl.

Cream the butter and sugar in a food processor or mixer. Add the eggs and vanilla. Add the sour milk and briefly blend, then dump this mixture on top of the dry ingredients along with the shredded zucchini. Fold all together until just barely mixed. (don’t overbeat) and pour into the bundt pan. Sprinkle the top with chocolate chips if desired and bake until the cake just starts to crack on top and pull away from the sides.
